A Fiji wedding cake has to survive an afternoon where the air is around 31°C and the humidity rarely drops. That rules out soft American buttercream outdoors, makes fondant sweat, and puts a hard four-hour cap on anything containing dairy. Ganache, meringue buttercream and a cake kept indoors until the last moment are what actually work.

None of this makes a good cake impossible in Fiji. It makes the timing of the cake a planning decision rather than an afterthought — which is exactly how the resorts that do this well already treat it.

How hot does it actually get where the cake will be sitting?

Warm enough to matter, and warmest in exactly the months couples most want to marry.

Source: Mataki, Koshy & Lal, Baseline Climatology of Viti Levu, Pacific Science 60(1), 1961–1990 averages. These cross-check to within about half a degree of the Fiji Meteorological Service's current 1991–2020 normals, which the service publishes as scanned station sheets.

On the Coral Coast the Fiji Met Service's Nacocolevu station recorded a mean daily maximum of 33.5°C in February 2026, with an extreme of 34.6°C. Those are shade figures. A cake table in afternoon sun on a beach or lawn is hotter still, and nobody publishes that number because it depends entirely on where the table is.

Two things follow. Butter has no chance of holding structure at those temperatures. And the cake's real enemy is not the peak — it is cumulative time.

What does Fiji law actually require?

This is the part that gets skipped, and it is the part that binds your caterer.

Fiji's Food Safety Regulations 2009, regulation 18(3), states that no food containing milk, other than shelf-stable food, may be held in the danger zone between 5°C and 66°C for more than four hours in total prior to sale. Buttercream, cream cheese frosting, fresh cream and custard fillings all fall inside that.

Four hours in total is the operative phrase. The clock does not restart. Transport from Nadi counts. Time on the display table counts. Time waiting in a back-of-house corridor counts.

For comparison, Food Standards Australia New Zealand names "dairy products like milk, cream and fresh custard" as potentially hazardous and sets 5°C or colder for cold holding; the USDA advises that food "should not spend more than one hour in the Danger Zone when temperatures are above 90°F" — 32°C. No regulator anywhere publishes a rule specific to wedding cake. The dairy rule is the rule.

Buttercream, fondant or naked: what survives?

Why fondant sweats. Fondant contains undissolved crystalline sugar, which makes it hygroscopic. As the food-technology text Chemical Deterioration and Physical Instability of Food and Beverages puts it, "the presence of crystalline material in sugar-based toppings makes them hygroscopic, i.e. likely to absorb water, especially when exposed to humid atmospheres", and a free water layer at the surface "may act as a lubricant and permit the fondant to flow under the influence of gravity".

The mechanism is the same one the US FDA describes in its water activity guide: water moves until the product's vapour pressure matches the air's. When the air is more humid than the fondant's equilibrium, moisture moves in and the surface goes tacky.

A second, separate effect is plain condensation — a cake taken from a cold room into warm humid air will bead, exactly like a cold glass. That one is entirely avoidable: move the cake once, let it come to ambient in a dry sheltered space, and do not open the box early.

Be aware that every specific humidity threshold you will read online for fondant sweating comes from cake-decorating trade blogs, not from published research. The mechanism is documented; the numbers are not.

What do Fiji resorts actually include?

More than couples assume, and less than they picture. This is what the venues publish themselves.

VenuePublished cake inclusion
Fiji Marriott Resort Momi Bay1-tier, 2-tier and 3-tier, scaling with the package
Outrigger Fiji Beach Resort"2 Tier Wedding Cake" in the Dream package; the chapel package sheet lists flavours — traditional fruit cake, chocolate, vanilla
Castaway Island Resort"Wedding cake for the bride and groom" on the two-person ceremony; "Wedding cake" on the 10- and 20-guest packages
Tokoriki Island Resort"Decorated wedding cake for two"
Fiji Hideaway Resort & Spa"Wedding Cake- 1 tier" in the Paradise package; no cake in the vow-renewal or beachfront packages
InterContinental Fiji Golf Resort & SpaNo cake listed in any published package

Outrigger is the only Fiji resort we found publishing cake flavours. Not one publishes a size. "Wedding cake" on an inclusion list can mean a single 6-inch tier — which is the right size for a two-person elopement and nowhere near enough for forty guests. Ask for diameter and servings in writing before you assume you have a dessert.

Bringing in an outside cake maker

Fiji's cake trade runs largely on social media rather than websites, which is a genuine planning nuisance rather than a reflection of quality. Corner Cafe in Nadi is the outlier, publishing flavours — cheesecake, red velvet, vanilla, piña colada, chocolate, mudcake, mocha, strawberry, black forest, white forest — and sizes from 6 to 12 inches. Sweet Endings Fiji in Suva is known for multi-tier fondant work and runs through its social channels and a Tappoos City counter. Fiji Cakes and Cake World cover the Lautoka and Nadi side; Cakes 2000 and Bakewell Cakes are long-standing Suva bakeries.

None of them publishes a lead time or a delivery policy. So ask, in this order: can you deliver to the venue; how long is the journey; what is it travelling in; and what time will it arrive. An hour of un-airconditioned road from Nadi to the Coral Coast is an hour off your four.

The running order that actually works

  1. Cake arrives in a cool room, not on the display table. Confirm the venue has somewhere at or below 5°C, or somewhere genuinely cool and shaded.
  2. Start the four-hour clock at the moment it leaves refrigeration, and write that time on the run sheet.
  3. Display it late. Bring the cake out 20 to 30 minutes before the cutting, not at the start of the reception.
  4. Never in direct sun, and never under a marquee in still air, which is hotter than outside.
  5. Cut, then clear. Back to the kitchen the moment photographs are done, and plated from there.
  6. Have a non-dairy alternative if the reception runs long — a fruit cake tier, or a dessert table that does not depend on butter.

If the ceremony is timed to sunset, this arranges itself neatly: the cake stays cool through the hot part of the day and appears after the temperature has dropped.

Decide it this way

If your reception is indoors or after dark, fondant over ganache gives you the look most couples picture. If it is outdoors in daylight, choose ganache or a naked finish and accept that the cake is a 30-minute guest, not a centrepiece. If anyone has suggested fresh cream in February, that is the one to push back on.
