Fiji's event catering market splits three ways: resort banquet kitchens that only cater their own function space, restaurant businesses with a catering arm, and independent caterers who work off-site. The independents and the restaurant groups are the ones you contract directly. Almost none of them publish a price list, which is why the brief you send matters more than the shortlist you send it to.

This is the directory of event caterers verified in MICE Fiji's supplier database, with what each one actually does and where it can reach. Resort banquet operations are covered separately in Fiji Event Catering, the hub for this subject, and the cost structures are broken down in Conference Catering in Fiji: What It Costs and What You Get.

Who caters events in Fiji?

The independent and restaurant-based caterers cluster in two places: Nadi, serving the airport corridor and Denarau, and Suva, serving the capital's government, corporate and diplomatic business. Lautoka has a small local base. The outer islands have almost none — island resorts cater themselves, and that is not a gap in the market so much as a fact of logistics.

The honest caveat on that table: "stated reach" is what each operator says of itself. None of these caterers publishes a maximum head count, a per-head rate card or a staffing ratio. Several trade entirely through a Facebook page. That is normal for the Fiji supplier base and it is not a sign of a weak operator — it does mean you cannot compare them from a desk, and you should treat any third-party claim about their capacity with suspicion.

Which caterers can handle a large conference group?

On published information, three operators show evidence of scale and repeatable corporate work: Chefs Catering Fiji, trading since 1993 and catering film and television productions as well as conferences; Bulaccino Catering, working from a full commercial kitchen and bakery at Namaka with a stated reach across Nadi, Denarau and Suva; and Vasaqa Fiji, which runs a fixed restaurant alongside mobile catering and has production-catering experience.

Production catering is a useful signal. Feeding a film crew means hot service at volume, on time, in a field, for consecutive days. A caterer who does that reliably can usually handle a conference lunch. It is not proof, but it is better evidence than a photograph of a canape.

For Suva, My Kai and Paradiso both operate from established restaurant bases with their own kitchens and event teams, which matters when you need a plated dinner rather than a buffet.

What does an off-site caterer actually need from the venue?

This is where off-site catering in Fiji goes wrong, and it is almost never the caterer's fault. Before you contract anyone, establish these five things about the venue in writing.

  1. Is there a kitchen, and may the caterer use it? Many Fiji function spaces — village halls, sports facilities, marquee sites, private residences — have no commercial kitchen at all. The caterer then needs a prep area, power, potable water and waste removal.
  2. What power is available, and on what circuit? Bain-maries, urns and refrigeration will trip a domestic board. Confirm the supply with the venue, not the caterer.
  3. Is there refrigeration on site, and how much? Fiji afternoons run near 31°C in the hot months. Cold-chain capacity is the single biggest constraint on an off-site menu.
  4. Does the venue levy a vendor or corkage fee? Resorts frequently do, and it can be large enough to erase the saving that sent you off-site in the first place.
  5. What is the load-in route and the latest access time? A gated precinct like Denarau Island, or a jetty transfer to an island site, changes what can be cooked on site versus delivered hot.

The parallel question inside a resort is whether the banquet kitchen can actually produce your service at once — a different constraint, and the one covered in Banquet Kitchen Capacity: The Constraint Nobody Checks.

How should you brief a Fiji caterer so quotes are comparable?

Send every caterer the same four-part brief, and you will get quotes you can put side by side.

Brief elementWhat to specifyWhy it changes the price
Numbers and timingConfirmed head count, service start and finish, number of services per dayStaffing is the main variable cost, and it is priced by shift, not by head
Service styleBuffet, plated, grazing, canape, food stations, or a mixPlated service can need two to three times the floor staff of a buffet
Site conditionsKitchen access, power, refrigeration, water, load-in time, distance from the caterer's baseDetermines whether the caterer cooks on site or transports hot food
Dietary and cultural needsHalal, vegetarian, allergy, and whether a lovo or kava element is wantedSeparate preparation lines and separate sourcing both carry cost

Ask for the quote in FJD, and ask explicitly whether it is inclusive or exclusive of tax. Fiji levies VAT, and a 5% Tourism Services Tax commenced on 1 September 2026 for tourism businesses above a FJ$2 million turnover threshold, per the Fiji Revenue & Customs Service. Smaller independent caterers may sit under that threshold while the resort hosting you does not — which means two line items on the same event are taxed differently. Confirm the current rates with FRCS before you sign.

So which caterer should you approach?

Choose on base and brief, in that order.

  • Nadi, Denarau or an airport-corridor event: start with Chefs Catering Fiji, Bulaccino Catering and Vasaqa Fiji. All three publish their own websites, which makes the first contact straightforward.
  • Suva: start with My Kai and Paradiso for plated and private dining, and Innovative or Inspired for conference volume.
  • Lautoka and the western interior: Ramlus and Arthis are the local options; expect to brief them by phone or Facebook.
  • An island or a non-resort site: solve the venue questions above first. The answers may tell you to use the resort's own kitchen regardless of price.

If you are choosing between catering off-site and taking a restaurant whole, the trade-offs are set out in Offsite Dinner Venues for Conference Groups. And if you would rather hand the whole food and beverage line to one party, that is a DMC brief — start from the PCOs, DMCs & Suppliers directory and work through the full supplier list at MICE Fiji's capacity index.
